Omak Kick'n Chicken Soup

The Kick’n Chicken soup is a spicy tortellini and potato soup. It’s a clear broth soup with mild to medium spice. This soup is great topped with sour cream or tons of shredded cheese.

You will need:

  • 1/2 Fresh Chicken Breast or 3 oz. Can Chicken

Includes:

  • Tortellini & Potatoes
  • 1 Spice packet

Directions:

Stovetop Directions:
1. In 4 quart saucepan brown meat. Then add 3 1/2 cups water and both packets.
2. Cover and bring to a boil.
3. Stir in tortellini mix. Replace lid and simmer for 30 minutes or until the tortellini are done and the potatoes are soft.
4. Salt and pepper to taste. Serve

Crockpot Directions:
Add 3 1/2 C. water, the entire soup mix & meat to the slow cooker. Cook on low for 2.5 to 5 hours. The longer you leave the soup cooking the more the noodles will expand. Enjoy!

Instant Pot Directions:
Reduce water by 1/2 cup. Add water, soup mix and meat to Instant Pot. Lock the lid and seal the valve, set to Soup Mode, or High Pressure. Cook for 10 minutes, allow the pressure to release naturally. Enjoy! 


Cooking Variations:

Vegetable Overload: 10-15 minutes before the soup is done, add 1 or 2 cups of fresh vegetables. We like summer squash, carrots of even tomatoes.
Make it Creamy: Reduce water by 1 cup, cook as normal, right before serving add 1/2 cup of half and half
Dress it up: Top with sour cream & chives

Omak, Washington is world renown for its rodeo, the Omak stampede. The Omak Stampede has gained fame for its performance, dubbed the Suicide Race, which began with Native Americans years ago. In late May, the Native Americans camped along the Columbia River to fish and prepare for the celebrations that would follow the Salmon harvest.

In the 1920’s Hugh McShane, a white man married to a Colville Indian woman, began to promote the Salmon Days as the Keller Rodeo. In addition to bronc and bull riding, McShane promoted the continuation of a thrilling and dangerous race called the mountain race.

The mountain race, now referred to as the suicide race, is only a half-mile long. The race’s first leg begins as riders race down a steep boulder-strewn chasm; from there, riders race across the Sanpoil river and across the finish line in the rodeo arena. The Suicide race soon became the main attraction as well as the crowd’s favorite part of the show. Despite its name, a long time Keller resident Henry Kuehne claims the original race was much more dangerous than the contemporary race by saying “[t]hat old race could really be a horse killer. Compared to it, the race they have today is pretty tame.”

The legend states that when Venus stayed in a tavern on the outskirts of the city of Bologna, the innkeeper spied on her through the keyhole of her room, but could catch only a glimpse of her navel. Spellbound, he went to the kitchen and, to capture this vision, shaped fresh egg pasta into the navel-sized Tortellini.
