St Helens Chicken Noodle & Mushroom Soup

This soup is full of mushrooms and homestyle egg noodles. With just a hint of spinach and lots of onion this is sure to be a crown pleaser during the cold winter season.

You will need:

  • 1/2 Cubed Chicken Breast or 3 oz. Canned Chicken

Package Includes:

  • Noodle & Mushroom Mixture
  • 1 Spice Packet

Directions:

Stovetop Directions:
1. In 4 quart saucepan brown meat, drain fat. Add 4 cups water and both packets.
2. Cover and bring to a boil.
3. Stir in noodles. Replace lid and simmer for 20 minutes or until the noodles are soft.
4. Salt and pepper to taste. Serve

Crockpot Directions:
Add 4 C. water, the entire soup mix and chicken to the slow cooker. Cook on low for 2.5 to 5 hours (maximum). The longer you leave the soup cooking the more the noodles will expand. Enjoy!!

Instant Pot Directions:
Reduce water by 1/2 cup. Add water, soup mix and meat to Instant Pot. Lock the lid and seal the valve, set to Soup Mode, or High Pressure. Cook for 10 minutes, allow the pressure to release naturally.  Enjoy!


Cooking Variations:

Vegetable Overload: 10-15 minutes before the soup is done, add 1/2 or 1 cups of fresh vegetables. We like summer squash & broccoli.
Mix up the Meat: Use sausage, ground turkey or turkey meatballs
Boost the Broth: Cook with bone in chicken – such as a thigh

Vegetarian: Prepare without meat, discard the yellow chicken base packet. Use 15 oz. vegetable broth and reduce water by 2 cups. If desired, add meat substitute.
Low Sodium: Discard the chicken packet, replace 2 cups of water with low sodium chicken broth or simply add less of the chicken packet to reduce the sodium.

Tidbits of History

There are 18 volcanoes in the Cascade Mountains, but only one holds claim to the deadliest volcanic event in United States history.

On May 18, 1980, Mt. St. Helens erupted in a massive display of power. Numerous earthquakes and evacuation warnings preceded the eruption but 57 people still lost their lives. Numerous homes were destroyed, roads were decimated, and railways were buried.

Experts say the main reason so many people were in harm’s way is because of the direction St. Helens erupted. Instead of erupting straight into the air, the side of St. Helens gave way after an earthquake. The pent up lava, steam, and gas exploded out the side of the volcano. A pyroclastic flow engulfed many people who would have otherwise been safe. The eruption lasted over 9 hours and emitted a gas and ash plume that rose 12 miles into the air. The ash floated on the winds to the northeast and was collected as far away as Edmonton in Albert, Canada.

As the ice and snow on the mountain melted, lahar flows and floods ripped through the surrounding river valleys. After the eruption, most people said the area around the mountain looked like a moonscape. Trees were pushed over, meadows filled with ash, and rivers were muddy with debris.

Today, St. Helens is still the most active volcano in the Cascade Range. Even as the most active volcano, St. Helens is a place of beauty and a place to contemplate both nature’s power and its majesty. It is also a place to hike, camp, fish, and enjoy the outdoors.
