Taneum Canyon Chili

The Taneum Canyon Chili embodies northwest flavors. Packed full of garlic, onion and chili powder it tastes great on potatoes. We like to throw a bunch of bakers in the oven then put a couple packages on the stove and invite the whole family over. It’s a great meal and like pizza tastes even better the next day.

You will need:

  • 1/2 lb. ground beef or turkey (optional)
  • 1 8 oz. can tomato sauce or 1 8 oz. can tomato paste

Package Includes:

  • 1 Spice packet
  • 1 Crushed pepper packet

Directions:

Stovetop Directions
1. Look through beans for pebbles or other field debris, rinse in colander. Soak beans (optional, directions below).
2. In 4 quart sauce pan, add 3 1/4 cups water to beans (reduce water by 1/4 C for thicker chili). *Cover and bring to a boil, reduce heat and let simmer until beans begin to soften, about 45 minutes.
3. Add browned meat, tomato sauce, and spice packet to beans. Add crushed pepper a little at a time to make chili spicier. Simmer until beans are soft.
4. Salt and pepper to taste. Serve

Crock Pot Directions:
Add 3 1/4 C. water, the entire soup mix and meat to the slow cooker. Cook on low for 6 to 10 hours. Cook on high for 3 1/2 to 6 hours. Add tomato right before serving. Enjoy!

Instant Pot Directions:
Reduce water by 1/2 cup. Add water, soup mix, meat and tomato to Instant Pot. Lock the lid and seal the valve, set to Soup Mode, or High Pressure. Cook for 30 minutes, allow the pressure to release naturally or manually let the steam off. Enjoy! 


How to Soak Beans

Place bean mix in a saucepan. Add 3 1/4 C. water, then soak for 8 to 24 hours. Keep the water and return to the directions after the asterisk*, or discard the water and add fresh water.
When adding fresh water, reduce water by 3/4 C if you soaked the beans for 8 hours or 1 1/4 C. if you soaked the beans for 24 hours.


Cooking Variations:

Pepper love: Add green bell peppers, jalapeno or Anaheim peppers.
Switch up the Meat: substitute steak in place of ground meat.
Vegetarian: Prepare without meat. If desired, add meat substitute. This soup is suitable for the Daniel Fast if prepared without meat.
Baked potatoes: One of our favorite ways to eat this soup is to have it over baked potatoes, add cheese, sour cream and all the normal fixin’s

The USDA recommends that adults eat three cups of beans per week for the maximum health benefit. Beans are naturally low in total fat, contain no saturated fat or cholesterol, and are an excellent source of protein, calcium, iron, folic acid, and potassium.

Fun Fact: Beans are high in fiber and complex sugars that our bodies have to work hard to digest; this may cause gas. Over time increase the amount of beans you eat to help your body adapt.

Tidbits of History
The Native American Indians must have foreseen a future in the beautiful forested Taneum Canyon. They had settlements along the Taneum Creek for hundreds of years. They enjoyed the abundant water, wild game, and protection of the canyon. Settlers came to the region in the mid to late 1800s and began homesteading. They established farms, orchards, a schoolhouse, a coal mine, and a sawmill at Skull Springs.

Timber was the major resource here. Logging began in the early 1900s using horses. In 1930 a railroad was built up the Taneum to Case Knife Creek. The ties for the railroad were cut at the Taneum Sawmill. This line was used, for the logging industry, until 1939. In 1936 The Conservation Corps established a camp at what is now the Taneum ranger station during the depression. They planted trees, fought fires, and cleaned and maintained trails. This work helped to employ those in need of work.

Today the canyon is home to many families and is used for camping, hiking, and other recreation purposes. The Taneum Canyon frames the sky to the west of the Rill Specialty Foods Factory and is one of our employee’s favorite places to camp and hike.
