Steptoe Butte Barley and Mushroom

Barley is one of those grains that will fill you up every time. It has a delicious nutty flavor and almost pasta consistency that pairs great with the creamy meaty texture of mushrooms. This soup cooks quicker than beans but packs in just as many nutrients.

You will need:

  • 1 4oz. Can Tomato Sauce
  • Ground beef, chopped beef, steak, or roast (optional)

Package Includes:

  • Barley & mushroom mix
  • 1 Spice packet

Directions:

Stovetop Directions:
1. In 4 quart saucepan brown meat. Add 3 3/4 cups water and both packets.
2. Bring to a boil. Add barley mix & 4 oz. tomato sauce.
3. Return to boil.
4. Reduce heat to low. Cover and simmer for 50 minutes or until barley is tender.
5. Salt and pepper to taste. Serve

Crock Pot Directions:
Add 3 3/4 C. water, the entire soup mix, tomato and meat to the slow cooker. Cook on low for 3 to 6 hours.

Instant Pot Directions:
Reduce water by 1/2 cup. Add water, soup mix, meat and tomato to Instant Pot. Lock the lid and seal the valve, set to Soup Mode, or High Pressure. Cook for 14 minutes, allow the pressure to release naturally, add 2 minutes if you will manually let the steam off. Enjoy! 


Cooking Variations:

Creamy: Reduce water by 1/2 cup, just before serving add 1/2 cup cream.
Switch up the meat: Use spicy italian sausage, kielbasa, ground turkey or leave it out altogether.
Mix up the tomatoes: Use chopped tomatoes instead of tomato sauce.
Vegetable Overload: 10-15 minutes before the soup is done add 1-2 C. cabbage, bok choy or leeks
Vegetarian: Prepare without meat, if desired, add meat substitute.

Barley Nutritional Value
In May 2006 the US Food and Drug Administration authorized use of a health claim for the role of beta-glucan soluble fiber from barley in reducing the risk of coronary heart disease. The ruling was based on scientific evidence from clinical trials reporting significantly lower serum total and LDL cholesterol levels in people who consumed whole grain barley products that replaced wheat and rice ingredients. Barley is high in fiber and known to help reduce risk of Type 2 diabetes.

Low Sodium: You can discard the beef packet and replace 2 cups of water with low sodium beef broth or simply add less of the beef packet to reduce the sodium.

Tidbits of History
In the Palouse’s sensual hills, Steptoe Butte offers a stunning view of farmlands, the jagged Bitterroot Mountains of Idaho, and the distant Blue Mountains of Southeast Washington. With an elevation total elevation of 3612 feet, the road to the summit rises 1600 feet in 4 1/2 miles. It spirals up, making three complete 360-degree loops.
Steptoe Butte is listed as a National Nat
ural Landmark because of its geological importance. It is a remnant of ancient rock rising through layers of much younger basalt.

In 1877, James A. Davis operated a roadhouse at the foot of Steptoe Butte. He hosted parties and dances that drew people from all over the countryside. This lasted until 1883 when the railroads became plentiful in the Palouse and the stage traffic ended. Davis, hoping to bring business, built a grand hotel on the top of the Butte in 1888. It was two stories high and crowned with a rooftop balcony for site seeing. Davis died in 1898 without ever seeing his hotel prosper. The empty hotel burned 15 years later.

The area is now preserved as a park through the generosity of Virgil McCroskey. He donated two land parcels to the state in 1945 and 1946, providing that they are used solely as a public park forever.
