Umatilla Tomato Soup

You will need:

  • 2.5 Cups of Water
  • 1 Cup of Milk

Directions:

1. Add cold water and soup mix together in a sauce pan. Turn heat to medium high and gently stir the mix until it begins to boil.
2. Once the mix begins to boil, turn the heat to low and simmer for 10 minutes. Stir occasionally to prevent the soup from scorching.
3. Add your milk of choice, heat until warm but do not boil.
4. Salt and pepper to taste. Serve!


Cooking Variations:

Make it Chunky: Add a can of diced tomatoes and fresh basil.
Class it up: Add pesto or fresh basil top with finish with toasted pine nuts and croutons.
Everyone Loves Sriracha: Sauté bell peppers and onions. Top with a fried egg and a squeeze or Sriracha. Serve with crusty bread.
