Wapato Stuffed Pepper Soup

Most people say ‘stuffed pepper soup, what is that?’ We then respond ‘it’s like a stuffed bell pepper’ and they say ‘oooooooohhhhh, that makes sense.’ This soup is not spicy but does have optional red peppers if you want a kick. It can be made thicker by omitting 1/2 cup water and we’ve even made stuffed bell peppers with it.

You will need:

  • 1/2 lb. Hamburger or Ground Turkey
  • 8 oz. can Tomato Sauce

Package Includes:

  • Rice & Bell Pepper Mixture
  • 1 Spice Packet

Directions:

1. In 4 quart saucepan brown meat. Add 3 1/2 cups water, both packets and the tomato sauce.
2. Cover and bring to a boil. Add rice mix and a few crushed peppers at a time to avoid making the soup too spicy.
3. Cover, reduce to simmer for 30 minutes or until rice is soft.
5. Salt and pepper to taste. Serve

Crock pot Directions:
Add 3 1/2 C water, the entire soup mix, tomato sauce and meat to the slow cooker. Cook on low for 2 to 5 hours (maximum). The longer you leave the soup in the slow cooker the more the rice will expand. Enjoy!

Instant Pot Directions:
Reduce water by 1/2 cup. Add water, soup mix and meat to Instant Pot. Lock the lid and seal the valve, set to Soup Mode, or High Pressure. Cook for 10 minutes, allow the pressure to release naturally or manually let the steam off.


Cooking Variations:

Make it Thick: Reduce water by 3/4 C. cook until thick. Serve in tortilla with cheese, sour cream, lettuce, tomato etc.
Vegetable Overload: 10-15 minutes before the soup is finished, add 1/2-1 C zucchini, mushrooms, or bell peppers.
Mix up the Tomato: Try using Mexican chopped tomatoes instead of sauce
Vegetarian: Prepare without meat, if desired, add meat substitute.
Dress it up: Top with cheese and sour cream
